  • 2 lbs. Yukon gold potatoes (quartered)
  • 3 cloves garlic (minced)
  • 2 tsp smoked paprika
  • 2 tsp cayenne pepper
  • Salt to taste
  • 12 flour tortillas (8-inch)
  • Oil for frying

Instructions

  1. Parboil the quartered Yukon gold potatoes in a large pot of salted water until fork-tender (10–15 minutes). Drain thoroughly.
  2. Transfer the drained potatoes to a bowl and mash until smooth. Mix in the minced garlic, smoked paprika, cayenne pepper, and salt.
  3. Take one tortilla and add about 1/2 cup of potato filling at its center, pressing down slightly before rolling it up tightly.
  4. Heat oil in a frying pan over medium heat. Fry each flauta seam-side down for 3–5 minutes per side until golden brown.
  5. Remove from oil and drain on paper towels. Serve hot with salsa, guacamole, or sour cream.
