  • 34 lb beef chuck roast
  • 2 tablespoons olive oil
  • 1 onion, quartered
  • 4 cloves garlic, smashed
  • 3 carrots, peeled and cut into large chunks
  • 3 potatoes, peeled and cut into large chunks
  • 2 celery stalks, cut into large chunks
  • 1 cup beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper, to taste
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 1 bay leaf
  • 1 tablespoon cornstarch (for thickening, optional)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Heat olive oil in a large Dutch oven over medium-high heat. Season the beef chuck roast with salt and pepper.
  3. Brown the roast on all sides for about 4-5 minutes until golden. Remove from pot.
  4. Sauté onion and garlic in the same pot for about 2 minutes until fragrant.
  5. Add beef broth, red wine (if using), Worcestershire sauce, thyme, rosemary, and bay leaf; stir well.
  6. Return the roast to the pot and surround it with carrots, potatoes, and celery. Cover tightly with a lid.
  7. Transfer to the oven and cook for 3-4 hours or until fork-tender.
  8. If desired, thicken gravy by simmering cooking liquid on the stovetop; mix in cornstarch slurry until thickened.
  9. Let rest before slicing against the grain and serving with vegetables and gravy.
