  • 2 large pork chops
  • ¼ cup extra-virgin olive oil
  • 4 cloves garlic, chopped
  • 3 tablespoons dark brown sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons spicy brown mustard
  • 2 teaspoons dried thyme
  • 1 teaspoon onion powder
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon white wine vinegar
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Prepare the pork chops by slicing horizontally through the middle without cutting all the way through.
  2. In a mixing bowl, whisk together olive oil, garlic, brown sugar, lemon juice, mustard, thyme, onion powder, Worcestershire sauce, vinegar, salt, and pepper.
  3. Pour the marinade into a resealable plastic bag and add the pork chops. Seal tightly and refrigerate for 6 to 8 hours.
  4. Preheat your grill to medium-high heat. Remove chops from the marinade and discard leftover marinade.
  5. Grill each chop for about 8 minutes per side until browned and cooked to an internal temperature of 145°F (63°C). Let rest for 5 minutes before serving.
