  • 1 cup Unsalted Butter, room temperature (2 sticks)
  • 2 cups All-Purpose Flour
  • 1/2 teaspoon Salt
  • 1/2 cup Granulated Sugar
  • 1/2 pint Fresh Raspberries (or about 1 cup frozen raspberries, thawed)
  • 2 1/4 cups Granulated Sugar
  • 6 Tablespoons All-Purpose Flour
  • 6 Eggs
  • 3 Lemons, Juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9" x 13" baking pan and line it with parchment paper.
  2. Prepare raspberry puree by blending fresh raspberries with water; strain to remove seeds.
  3. For the crust, mix butter, flour, salt, and sugar in a bowl until smooth; press into the prepared pan and bake for 15-20 minutes until golden brown.
  4. In another bowl, whisk together sugar and flour; add eggs and lemon juice. Gradually mix in raspberry puree until well combined.
  5. Pour filling over the baked crust and return to the oven for 25-30 minutes until edges are set but center is slightly wobbly.
  6. Allow to cool completely before slicing into squares.
