- 1 cup Unsalted Butter, room temperature (2 sticks)
- 2 cups All-Purpose Flour
- 1/2 teaspoon Salt
- 1/2 cup Granulated Sugar
- 1/2 pint Fresh Raspberries (or about 1 cup frozen raspberries, thawed)
- 2 1/4 cups Granulated Sugar
- 6 Tablespoons All-Purpose Flour
- 6 Eggs
- 3 Lemons, Juice
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9" x 13" baking pan and line it with parchment paper.
- Prepare raspberry puree by blending fresh raspberries with water; strain to remove seeds.
- For the crust, mix butter, flour, salt, and sugar in a bowl until smooth; press into the prepared pan and bake for 15-20 minutes until golden brown.
- In another bowl, whisk together sugar and flour; add eggs and lemon juice. Gradually mix in raspberry puree until well combined.
- Pour filling over the baked crust and return to the oven for 25-30 minutes until edges are set but center is slightly wobbly.
- Allow to cool completely before slicing into squares.
