  • 2 medium flour tortillas
  • ½ lb beef (ribeye or top round), thinly sliced
  • ½ medium onion, chopped
  • ½ red pepper, diced
  • ½ green pepper, diced
  • 6 oz provolone cheese, sliced
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • Sea salt and black pepper to taste

Instructions

  1. Heat 2 teaspoons of olive oil in a large skillet over medium heat. Add the sliced beef and season with salt and pepper. Cook until fully browned; remove from skillet.
  2. In the same skillet, add the chopped onion, peppers, and mushrooms. Sauté until tender.
  3. Return the cooked beef to the skillet along with minced garlic. Stir until heated through.
  4. Assemble the quesadillas by spreading mayonnaise (if using) on one side of each tortilla. Place filling on one half of each tortilla and top with provolone cheese before folding.
  5. In the skillet over medium heat, cook each folded tortilla until golden brown and crispy, flipping once. Slice into wedges and serve hot.
