Ingredients
- 2 medium flour tortillas
- ½ lb beef (ribeye or top round), thinly sliced
- ½ medium onion, chopped
- ½ red pepper, diced
- ½ green pepper, diced
- 6 oz provolone cheese, sliced
- 1 Tbsp olive oil
- 1 garlic clove, minced
- Sea salt and black pepper to taste
Instructions
- Heat 2 teaspoons of olive oil in a large skillet over medium heat. Add the sliced beef and season with salt and pepper. Cook until fully browned; remove from skillet.
- In the same skillet, add the chopped onion, peppers, and mushrooms. Sauté until tender.
- Return the cooked beef to the skillet along with minced garlic. Stir until heated through.
- Assemble the quesadillas by spreading mayonnaise (if using) on one side of each tortilla. Place filling on one half of each tortilla and top with provolone cheese before folding.
- In the skillet over medium heat, cook each folded tortilla until golden brown and crispy, flipping once. Slice into wedges and serve hot.
