- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup jelly (any flavor)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together peanut butter, butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract; mix until well combined.
- In another bowl, whisk together flour, baking powder, baking soda, and salt; gradually add to the wet mixture until smooth.
- Scoop out dough (about 2 tablespoons), flatten into discs on the prepared baking sheet.
- Add about 1 teaspoon of jelly in the center of half the discs; cover with remaining discs and seal edges.
- Bake for 12-15 minutes until edges are golden brown. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
