Ingredients
- 1 1/2 lb chicken breast
- 2 lb red potatoes
- 1 lb fresh green beans
- 2 T olive oil (plus more for seasoning)
- 3 garlic cloves, minced
- 1/3 c grated parmesan cheese
- 1/3 c breadcrumbs
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F.
- Prepare potatoes: Toss red potato pieces with minced garlic, olive oil, parmesan, salt, and pepper in a bowl. Spread on one-third of a lined baking sheet and bake for 10–15 minutes.
