  • 2 large eggs (beaten)

  • ½ cup parmesan cheese
  • ¼ cup vegetable oil (for frying)

Instructions

  1. Wash and slice the zucchinis into ½” thick rounds.
  2. Set up three shallow bowls: one with flour mixed with salt and pepper, one with beaten eggs, and another with breadcrumbs combined with parmesan cheese.
  3. Dredge each zucchini slice in flour, dip in egg, then coat in the breadcrumb mixture.
  4. Heat vegetable oil in a large frying pan over medium-high heat until shimmering.
  5. Fry the zucchini slices for about 1-2 minutes on each side until golden brown and crispy.
  6. Transfer cooked slices to a plate lined with paper towels to absorb excess oil.
