  • 3 cups graham cracker crumbs
  • 3/4 cup butter, melted
  • 28 oz. pkg. cream cheese, room temperature
  • 1 cup granulated sugar
  • 1/3 cup lemon juice
  • 1 cup 2% milk
  • 3.4 oz. box instant lemon pudding
  • 21 oz. can blueberry pie filling
  • 16 oz. tubs frozen whipped topping, thawed

Instructions

  1. Prepare the crust by mixing graham cracker crumbs with melted butter. Press into the bottom of a 13 x 9-inch dish and refrigerate to set.
  2. For the lemon layer, beat cream cheese and sugar until fluffy, then mix in lemon juice and milk. Gradually add instant pudding mix until smooth, then spread over the crust.
  3. Spoon blueberry pie filling over the lemon layer and spread gently.
  4. Top with thawed whipped topping and optional reserved graham cracker crumbs for texture.
  5. Chill for at least two hours before serving.
