  • 1 lb precooked ham or bacon
  • 1/2 onion, chopped
  • 1 green pepper, chopped (optional)
  • 1.5 cups grated medium cheddar cheese
  • 12 eggs
  • 3/4 cup whole milk
  • Salt and pepper to taste

Instructions

  1. Grease the inside of a 4-quart slow cooker.
  2. Layer 1/3 of the hash browns at the bottom, followed by 1/3 of the ham or bacon, onions, green pepper (if using), seasonings, and cheese.
  3. Repeat layering two more times.
  4. In a mixing bowl, whisk together eggs and milk until smooth.
  5. Pour the egg mixture over the layered ingredients.
  6. Cover and cook on low for 6-8 hours until eggs are set.
