  • 6 chicken thighs (bone-in)
  • Juice of 1/2 lemon
  • 1/4 cup chicken stock
  • 1 tablespoon olive oil
  • 1 1/2 tablespoons turmeric
  • 1 tablespoon cumin
  • 1/2 tablespoon dried coriander
  • 2 cups basmati rice
  • 3 1/2 cups chicken stock
  • 1 onion (finely chopped)
  • Salt
  • Pepper

Instructions

  1. Marinade chicken: Mix lemon juice, turmeric, cumin, coriander, garlic, salt, and pepper in a bowl. Add chicken and coat well. Refrigerate for at least one hour.
  2. Preheat oven to 350°F.
  3. Sear chicken: Heat olive oil in a large ovenproof skillet over medium heat. Sear chicken for about 10 minutes until browned on both sides. Remove and set aside.
  4. Prepare rice: In the same skillet, sauté onion and garlic until fragrant. Add remaining spices and stir until softened. Mix in basmati rice and coat fully.
  5. Bake: Pour in chicken stock and return seared chicken on top of the rice mixture. Cover tightly and bake for about 20 minutes until liquid is absorbed.
  6. Fluff: Remove from oven, let sit briefly, fluff rice with a fork before serving.
