  • 5 medium red beets
  • 2 teaspoons orange zest
  • ½ cup fresh orange juice
  • 1 tablespoon extra-virgin olive oil
  • 1½ teaspoons ground cumin
  • 1 teaspoon kosher salt
  • ½ small red onion
  • ¼ cup fresh mint leaves
  • ¼ cup fresh cilantro leaves

Instructions

  1. Preheat the oven to 400°F.
  2. Wrap each beet in aluminum foil and place them on a baking sheet. Roast for about 40-50 minutes until tender.
  3. Allow the beets to cool, then peel and cut into 2-inch pieces.
  4. In a mixing bowl, whisk together orange zest, juice, olive oil, cumin, and salt.
  5. Add the roasted beets, sliced red onion, mint, and cilantro to the bowl. Toss until well coated.
  6. Serve on a platter with optional flaky salt and additional herbs for garnish.
