  • 2 teaspoons baking powder
  • 175 g (3/4 cup) softened butter
  • 150 g (3/4 cup) regular sugar
  • 2 large eggs
  • 150 ml (2/3 cup) milk
  • 1.5 teaspoons vanilla extract

Instructions

  2. Sift together flour, baking powder, and salt in a mixing bowl.
  3. In another bowl, cream softened butter and sugar until light and fluffy.
  4. Gradually add beaten eggs while mixing on low speed; if curdling occurs, add a spoonful of flour.
  5. Mix in half the milk and half the dry ingredients; then fold in the remaining milk and flour gently.
  6. Pour batter into the tin and bake for 60–65 minutes until golden brown.
  7. Cool in the tin before transferring to a wire rack.
