Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 package taco seasoning
- 2 cans red enchilada sauce
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can Rotel diced tomatoes and green chilies
- 1 can diced tomatoes
- 2½ cups low-sodium chicken broth
- ½ cup shredded cheddar cheese
- ⅓ cup heavy cream
Instructions
- Place chicken breasts in the slow cooker and sprinkle taco seasoning over them.
- Add diced tomatoes, Rotel, red enchilada sauce, black beans, corn, and chicken broth into the slow cooker.
- Cover and cook on LOW heat for 4 to 6 hours until chicken is tender.
