  • 1 medium onion, finely chopped
  • 2 large eggs
  • 3 garlic cloves, minced
  • 3/4 cup ketchup (divided)
  • 3/4 cup Panko breadcrumbs
  • 1/3 cup milk
  • 2 tbsp brown sugar
  • Italian seasoning, salt, and pepper

Instructions

  1. Preheat your oven to 350°F and line a rimmed baking sheet with parchment paper.
  2. In a skillet over medium heat, sauté the chopped onion in olive oil until softened.
  3. In a large mixing bowl, combine ground beef, sautéed onions, eggs, garlic, ketchup (reserve some for glazing), breadcrumbs, milk, Italian seasoning, salt, and pepper. Mix until just combined.
  4. Shape the mixture into a loaf on the prepared baking sheet and bake uncovered for about 40 minutes.
  5. Meanwhile, prepare the glaze by mixing reserved ketchup with brown sugar. Spread it over the meatloaf after the initial baking time.
  6. Return to the oven and bake for an additional 20 minutes or until the internal temperature reaches 160°F. Let rest before slicing.
