  • 1 bay leaf
  • 3/4 cup ditalini pasta
  • 6 cups chicken stock
  • 1/2 cup low-fat cream cheese
  • 1/2 cup half-and-half
  • 2 cups rotisserie chicken (shredded)
  • 1/3 cup Parmesan (grated)
  • 2 cups fresh baby spinach

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery; cook for about 5 minutes until softened.
  2. Stir in garlic, cooking for an additional minute before adding sun-dried tomatoes and red chili flakes; cook for another minute.
  3. Add bay leaf, ditalini pasta, and chicken stock; bring to a boil then reduce heat and simmer until pasta is nearly cooked through (10-12 minutes).
  4. Stir in cream cheese and half-and-half; let simmer until the cream cheese melts.
  5. Incorporate shredded chicken, Parmesan cheese, and spinach; stir well. Cook with lid on for 1-2 minutes until spinach wilts.
  6. Season with salt and pepper to taste before serving hot.
