- 16 oz penne pasta
- 2 lb hot Italian sausage
- 24 oz shredded mozzarella cheese
- 1 medium onion, diced
- 5 cloves garlic, minced
- 28 oz can diced tomatoes
- 1½ tsp dried basil
- 1½ tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F and spray a 3-quart casserole dish with non-stick spray.
- In a large skillet over medium heat, cook crumbled sausage until browned. Drain excess grease.
- Sauté onions and garlic in reserved grease until translucent.
- Add diced tomatoes, basil, oregano, salt, and pepper; cook for 5 minutes.
- Return sausage to skillet; bring to a boil then simmer covered for 20-30 minutes.
- Cook penne pasta until al dente; drain and return to pan.
- Combine pasta with the sausage mixture and stir in half of the mozzarella until melted.
- Layer half of the mixture in the casserole dish, sprinkle cheese on top, add remaining mixture, then top with remaining cheese.
- Cover with foil and bake for about 30 minutes until bubbly.
