  • 16 oz penne pasta
  • 2 lb hot Italian sausage
  • 24 oz shredded mozzarella cheese
  • 1 medium onion, diced
  • 5 cloves garlic, minced
  • 28 oz can diced tomatoes
  • 1½ tsp dried basil
  • 1½ tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F and spray a 3-quart casserole dish with non-stick spray.
  2. In a large skillet over medium heat, cook crumbled sausage until browned. Drain excess grease.
  3. Sauté onions and garlic in reserved grease until translucent.
  4. Add diced tomatoes, basil, oregano, salt, and pepper; cook for 5 minutes.
  5. Return sausage to skillet; bring to a boil then simmer covered for 20-30 minutes.
  6. Cook penne pasta until al dente; drain and return to pan.
  7. Combine pasta with the sausage mixture and stir in half of the mozzarella until melted.
  8. Layer half of the mixture in the casserole dish, sprinkle cheese on top, add remaining mixture, then top with remaining cheese.
  9. Cover with foil and bake for about 30 minutes until bubbly.
