Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
  2. In a mixing bowl, whisk together vegetable oil, buttermilk, eggs, and vanilla until blended.
  3. In another bowl, sift together flour, sugar, cocoa powder, baking soda, baking powder, and salt. Gradually add to the wet mixture while mixing on low speed until just combined.
  4. Slowly mix in the hot coffee until fully incorporated; the batter will be thin.
  5. Divide batter between prepared pans and bake for about 38 minutes or until a toothpick comes out clean.
  6. Cool in pans for about 10 minutes before transferring to a cooling rack.
  7. For frosting: Melt chopped chocolate and beat with butter, egg yolk, vanilla, powdered sugar, and dissolved instant coffee until smooth.
  8. Assemble by frosting between layers and on top of the cooled cake.
