  • 1 lb ground beef or chicken
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 tablespoons finely chopped onion
  • 4 cloves garlic (minced)
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1/2 cup diced bell peppers
  • 1/2 cup frozen peas

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, combine ground meat, breadcrumbs, egg, onion, garlic, soy sauce, black pepper, and salt. Mix until just combined and form into small meatballs.
  3. Sear the meatballs in a skillet over medium heat until browned on the outside.
  4. In a saucepan, combine honey, soy sauce, ketchup, water, and minced garlic; heat until bubbling. Optional: thicken with cornstarch.
  5. Spread uncooked rice in the baking dish and layer with bell peppers and peas. Pour chicken broth over everything and nestle the meatballs on top. Drizzle with honey garlic sauce.
  6. Cover with foil and bake for about 40 minutes; remove foil and bake for another 10–15 minutes until rice is fully cooked.
