  • 4 large Russet or Yukon Gold potatoes (peeled & chopped)
  • 6 slices thick-cut bacon
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and chop the potatoes into bite-sized pieces.
  2. Soak the chopped potatoes in ice-cold water for 10 minutes. Drain and pat dry.
  3. Cut the bacon into 1-inch pieces and cook in a skillet over medium heat until slightly crispy. Reserve the fat.
  4. In a mixing bowl, combine the dried potatoes with olive oil, 1 tablespoon of reserved bacon fat, garlic, salt, pepper, and onion powder. Toss until well coated.
  5. Spread the seasoned potatoes on a lined baking sheet in a single layer and bake for about 20 minutes.
