  • 1/2 cup heavy cream (120ml)
  • 3 tablespoons water (44ml)
  • 1/4 cup light corn syrup (60ml)
  • 1 cup sugar (200g)
  • 1/2 teaspoon flaked sea salt

Instructions

  1. Prepare a 9×5-inch loaf pan by lightly oiling it and lining it with parchment paper.
  2. In a microwave-safe bowl, melt the butter and heavy cream together until hot.
  3. In a saucepan, combine water and corn syrup; add sugar gently.
  4. Heat until boiling, then cover for 1 minute to dissolve sugar.
  5. Remove the lid and attach a candy thermometer; cook until the mixture reaches 320°F (160°C).
  6. Gradually stir in the cream mixture, being cautious of bubbling.
  7. Continue cooking until reaching 240°F (115°C), then pour into the prepared pan.
  8. Allow cooling before sprinkling with salt; let it cool completely before cutting into squares.
