Ingredients
- 2 boneless skinless chicken breasts
- 8 cups chicken broth
- 4 celery stalks (chopped)
- 4 whole carrots (peeled and chopped)
- 1/2 onion (diced)
- 2 cups egg noodles
- 1/4 teaspoon dried thyme leaves
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 Bay Leaves
- 2 cup water
Instructions
- In a large stock pot or Dutch oven, combine chicken breasts, chicken broth, celery, carrots, and onion.
- Bring to a boil; reduce heat to low and cover.
- Cook chicken until fully cooked (internal temperature of 165°F), approximately 20–30 minutes.
- Remove chicken from pot and shred with forks.
- Stir shredded chicken back into the pot along with thyme, garlic, salt, pepper, bay leaves, egg noodles, and water.
- Cook on medium-high heat for about 10 minutes until noodles are tender.
- Remove bay leaves before serving.
