  • 12 tablespoons very cold unsalted butter, diced into cubes
  • ½ cup very cold heavy cream
  • 2 large eggs, divided
  • 2 cups all-purpose flour, plus more for rolling out scones
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream
  • 1 tablespoon maple syrup
  • pinch of kosher salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine flour, sugar, baking powder, chai spice blend, and salt. Pulse to mix.
  3. Add cold butter cubes and pulse until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together heavy cream, one egg, and egg yolk; then add to the flour mixture until just combined.
  5. Turn the dough onto a floured surface, shape it into a disc, wrap it in plastic wrap, and freeze for 30 minutes.
  6. Roll out the chilled dough to about 1 inch thick and cut into wedges or desired shapes.
  7. Brush with reserved egg white and bake for 20–22 minutes until golden brown.
  8. While baking, prepare the glaze by whisking powdered sugar, chai spice blend, vanilla extract, heavy cream, maple syrup, and salt until smooth.
  9. Once baked, coat each warm scone in glaze and let set before serving.
