  • ½ cup pumpkin puree
  • ⅓ cup pure maple syrup
  • ¼ cup coconut sugar
  • ½ cup melted coconut oil
  • ⅔ cup oat flour
  • ¾ cup rolled oats
  • 1 tbsp pumpkin pie spice
  • ½ cup chocolate chips

Instructions

  1. Preheat your oven to 350ºF and line an 8×8 baking pan with parchment paper.
  2. In a mixing bowl, whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract until smooth.
  3. Stir in the oat flour, rolled oats, pumpkin pie spice, and baking soda until just combined.
  4. Gently fold in the chocolate chips.
  5. Pour the batter into the prepared pan and bake for 24-26 minutes until golden brown.
  6. Allow bars to cool for at least 10 minutes before cutting.
