  • 6 cups powdered sugar (sifted)
  • 1/4 cup plus 2 tablespoons Irish cream (such as Bailey’s)
  • 4 ounces semisweet or bittersweet chocolate (finely chopped)
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing them.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, mix sour cream, vegetable oil, eggs, vanilla extract, and Guinness until smooth.
  4. Gradually combine wet and dry ingredients without overmixing.
  5. Divide the batter evenly between the pans and bake for about 40 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool before frosting with Irish buttercream made by mixing softened butter with powdered sugar and Irish cream.
