  • 1 teaspoon Coconut Oil
  • 3/4 cup Plain Greek Yogurt
  • 1 large Egg
  • 1/4 cup Almond Milk (or any milk of choice)
  • 1/2 cup Granulated Sweetener (sugar-free brown erythritol or coconut sugar or brown sugar)
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Oat Flour (or all-purpose flour)
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt

Instructions

  1. Preheat your oven to 350°F (180°C) and line an 8-inch x 8-inch baking pan with parchment paper.
  2. Melt 1/3 cup of chocolate chips with coconut oil in a microwave-safe bowl and let cool.
  3. In one bowl, whisk together oat flour, cocoa powder, sweetener, baking powder, and salt.
  4. In another bowl, mix Greek yogurt, egg, vanilla extract, almond milk, and the cooled chocolate mixture until smooth.
  5. Gently fold the dry ingredients into the wet mixture until just combined. Stir in the remaining chocolate chips.
  6. Pour the batter into the prepared pan and bake for 20-23 minutes until a toothpick comes out clean.
  7. Allow to cool on a rack for one hour before cutting into squares.
