Ingredients
- 8 cups chicken broth
- 1/2 cup fresh lemon juice
- 1 cup cooked white rice
- 1 cup diced cooked chicken
- 8 egg yolks
- 6 tablespoons chicken soup base
- 1/4 cup margarine
- 1/4 cup all-purpose flour
- 1/2 cup shredded carrots
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped celery
- 1/4 teaspoon ground white pepper
- 16 lemon slices (for garnish)
Instructions
- In a large pot, combine chicken broth, lemon juice, carrots, onion, celery, chicken soup base, and white pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes until vegetables are tender.
- Mix margarine and flour in a bowl until smooth. Gradually stir into the simmering soup and cook for 8–10 minutes until slightly thickened.
- Beat the egg yolks in another bowl. Slowly whisk in hot soup to temper the eggs before adding back to the pot, stirring constantly without boiling.
- Add cooked rice and chicken; heat through.
- Ladle into bowls and garnish with lemon slices before serving.
