  • ¼ cup feta cheese (crumbled)

  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp freshly cracked pepper
  • Zest of 1 lemon
  • 1 tbsp extra virgin olive oil
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Juice of 1 lemon
  • 1 tbsp extra virgin olive oil
  • ⅓ cup crumbled feta cheese
  • Fresh parsley (chopped, for garnish)
  • Salt to taste

Instructions

  1. Combine all meatball ingredients in a bowl and form into 1½-2 inch balls.
  2. Heat olive oil in a skillet over medium heat and sear meatballs for about 4 minutes on each side until browned. Cover and cook for an additional 6 minutes until fully cooked.
  3. In the same skillet, bring chicken broth to a boil, add orzo, and cook according to package instructions (8–10 minutes).
  4. Stir in lemon juice and olive oil into the cooked orzo.
  5. Serve meatballs over lemon orzo, garnished with feta cheese and parsley.
