- 1 cup orzo pasta
- 2 cups chicken broth
- Juice of 1 lemon

Instructions
- Combine all meatball ingredients in a bowl and form into 1½-2 inch balls.
- Heat olive oil in a skillet over medium heat and sear meatballs for about 4 minutes on each side until browned. Cover and cook for an additional 6 minutes until fully cooked.
- In the same skillet, bring chicken broth to a boil, add orzo, and cook according to package instructions (8–10 minutes).
