  • 3/4 cup unsalted butter, softened to room temperature
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1/2 cup unsulfured molasses
  • 1 1/2 teaspoons vanilla extract
  • (optional) zest of one small orange

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the flour, cinnamon, ginger, baking soda, cloves, nutmeg, and salt.
  3. In another bowl, cream together the softened butter and brown sugar until light and fluffy.
  4. Beat in the egg, molasses, vanilla extract, and optional orange zest until well combined.
  5. Gradually add the dry ingredients to the wet mixture. Mix until just combined.
  6. Turn the dough onto a floured surface. Using a rolling pin, roll it out to about 1/8 inch thickness.
  7. Use cookie cutters to cut out shapes and place them on baking sheets lined with parchment paper.
  8. Bake in the preheated oven for about 10 minutes or until edges are firm but not browned.
  9. Let them cool on sheets before transferring them to wire racks.
