- 1/2 cup unsulfured molasses

- (optional) zest of one small orange
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, whisk together the flour, cinnamon, ginger, baking soda, cloves, nutmeg, and salt.
- In another bowl, cream together the softened butter and brown sugar until light and fluffy.
- Beat in the egg, molasses, vanilla extract, and optional orange zest until well combined.
- Gradually add the dry ingredients to the wet mixture. Mix until just combined.
- Turn the dough onto a floured surface. Using a rolling pin, roll it out to about 1/8 inch thickness.
- Use cookie cutters to cut out shapes and place them on baking sheets lined with parchment paper.
- Bake in the preheated oven for about 10 minutes or until edges are firm but not browned.
- Let them cool on sheets before transferring them to wire racks.
