  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225g dark chocolate (chopped)
  • 56g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100g caster or granulated sugar
  • 90g demerara or raw sugar
  • 1 teaspoon vanilla extract
  • 85g dark or milk chocolate chips

Instructions

  1. Preheat your oven to 160ºC (320ºF) with convection or 170ºC (338ºF) conventional. Line a baking tray with parchment paper.
  2. In a heatproof bowl, melt dark chocolate and butter over simmering water, stirring until smooth. Mix in vanilla extract.
  3. In another bowl, whisk together eggs and sugars until light and fluffy (about 5 minutes).
  4. Sift flour, cocoa powder, baking powder, and salt into a separate bowl; stir in chocolate chips.
  5. Gently fold the melted chocolate mixture into the egg mixture until combined.
  6. Carefully fold in dry ingredients until just mixed; do not overmix.
  7. Scoop tablespoons of batter onto the prepared tray, spacing them out for spreading.
  8. Bake for 12-14 minutes until the tops are set and crackly. Optionally sprinkle with sea salt before cooling on a rack.
