- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 225g dark chocolate (chopped)
- 56g butter (salted or unsalted)
- 2 eggs (room temperature)
- 100g caster or granulated sugar
- 90g demerara or raw sugar
- 1 teaspoon vanilla extract
- 85g dark or milk chocolate chips
Instructions
- Preheat your oven to 160ºC (320ºF) with convection or 170ºC (338ºF) conventional. Line a baking tray with parchment paper.
- In a heatproof bowl, melt dark chocolate and butter over simmering water, stirring until smooth. Mix in vanilla extract.
- In another bowl, whisk together eggs and sugars until light and fluffy (about 5 minutes).
- Sift flour, cocoa powder, baking powder, and salt into a separate bowl; stir in chocolate chips.
- Gently fold the melted chocolate mixture into the egg mixture until combined.
- Carefully fold in dry ingredients until just mixed; do not overmix.
