  • 1/2 cup unsalted butter, softened to room temperature
  • 3/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 8 ounces full-fat brick cream cheese, softened to room temperature
  • 3 tablespoons unsalted butter, softened to room temperature
  • 1 and 1/4 cups confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • 3 cups assorted sliced fresh fruit

Instructions

  1. Preheat oven to 350°F (177°C). Whisk together flour, cornstarch, baking powder, and salt in a bowl.
  2. In another bowl, cream butter and sugar until fluffy. Mix in egg and vanilla.
  3. Gradually add dry ingredients to wet mixture until combined. Chill dough for at least 20 minutes.
  4. Press chilled dough into a greased pizza pan and bake for 17–19 minutes until lightly golden. Cool completely.
  5. Beat cream cheese and butter until smooth; gradually mix in confectioners’ sugar and vanilla.
  6. Spread frosting over cooled crust and top with sliced fresh fruit.
