- 1/2 cup unsalted butter, softened to room temperature
- 3/4 cup granulated sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 8 ounces full-fat brick cream cheese, softened to room temperature
- 3 tablespoons unsalted butter, softened to room temperature
- 1 and 1/4 cups confectioners’ sugar
- 1 teaspoon pure vanilla extract
- 3 cups assorted sliced fresh fruit
Instructions
- Preheat oven to 350°F (177°C). Whisk together flour, cornstarch, baking powder, and salt in a bowl.
- In another bowl, cream butter and sugar until fluffy. Mix in egg and vanilla.
- Gradually add dry ingredients to wet mixture until combined. Chill dough for at least 20 minutes.
- Press chilled dough into a greased pizza pan and bake for 17–19 minutes until lightly golden. Cool completely.
- Beat cream cheese and butter until smooth; gradually mix in confectioners’ sugar and vanilla.
- Spread frosting over cooled crust and top with sliced fresh fruit.
