  • 4 large yellow onions
  • 2 large sweet onions (Vidalia)
  • 6 tablespoons butter
  • 4 cups beef broth (high quality)
  • 1.5 cups chicken broth
  • ¾ cup dry white wine (Chardonnay or Pinot Grigio)
  • 6 slices Gruyere cheese
  • 1 baguette

Instructions

  1. Slice the onions into ¼-inch thick pieces.
  2. In a large pot or Dutch oven, melt butter over medium-low heat.
  3. Add sliced onions and cook uncovered for about two hours, stirring every 10–15 minutes until caramelized.
  4. Sprinkle flour over the onions and cook for an additional two minutes.
  5. Add both broths, Worcestershire sauce, thyme, and bay leaves; simmer for 45 minutes with the lid cracked.
  6. Preheat your oven to 350°F (175°C). Bake sliced baguette until toasted.
  7. Top each baguette slice with Gruyere cheese and bake at 450°F (230°C) until melted.
  8. Serve hot by ladling soup into bowls and topping with cheesy baguette slices.
