Ingredients
- 1 cup uncooked quinoa
- 1 can (15 ounces) chickpeas
- 1 medium cucumber
- 1 medium red bell pepper
- ½ cup chopped red onion
- 1 cup parsley
- ⅓ cup olive oil
- ⅓ cup lemon juice
- 1 tablespoon red wine vinegar
- 2 cloves garlic
- ½ teaspoon fine sea salt

Instructions
- Rinse the quinoa and cook it with water in a medium saucepan until fluffy (about 15 minutes). Allow to cool.
