Ingredients
- 2 tbsp vegetable oil
- 1 onion (peeled and diced)
- 2 cloves garlic (peeled and minced)
- 800 g (4 cups) boiled and cooled long-grain rice
- 1/2 tbsp sesame oil
- 2 eggs
- 2 tbsp dark soy sauce
- 1/4 tsp salt
- 1/4 tsp garlic salt
- 1 tbsp lemon juice
- 1/2 bunch of spring onions (chopped)
Instructions
- In a large wok, heat 1 tbsp vegetable oil over medium heat. Add diced onion; cook for about 5 minutes until soft.
- Add remaining vegetable oil and minced garlic; sauté for an additional 30 seconds.
- Increase heat to high and add boiled rice with sesame oil; toss thoroughly using a spatula.
- Push rice to one side, crack in two eggs, and add a splash of soy sauce; scramble until just set.
- Mix scrambled eggs into the rice; season with remaining soy sauce, salt, garlic salt, and lemon juice.
- Serve hot topped with chopped spring onions.
