  • 1 19-ounce can white beans, drained and rinsed
  • 1012 ounces spinach, chopped
  • 1 tablespoon fresh Italian parsley, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 12 tablespoons grated Pecorino Romano or Parmigiano Reggiano cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large stockpot over medium heat.
  2. Sauté diced onion and sliced celery for about 5 minutes until onions are translucent.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add vegetable stock, grated potato, bay leaf, and thyme; bring to a boil.
  5. Reduce heat to medium, cover, and simmer for 15 minutes.
  6. Incorporate drained white beans and simmer for another 5 minutes.
  7. Gently stir in chopped spinach and simmer until wilted (about 1 minute).
  8. Remove from heat; add lemon juice and minced parsley, adjusting salt and pepper to taste.
