Ingredients
- 2 tbsp olive oil
- 1 white onion
- 2 medium-large carrots
- 2 cloves of garlic
- 250 g dried red lentils
- 1 tin of chopped tomatoes
- 2–3 large baking potatoes
Instructions
- Preheat your oven to 180°C (350°F).
- Dice the onion and carrots, then sauté in olive oil in a skillet for about 4–5 minutes until softened.
- Add minced garlic and corn flour; cook for an additional 1–2 minutes.
- Stir in lentils, chopped tomatoes, herbs, spices, and half the vegetable stock. Bring to a boil, then reduce to simmer for about 15 minutes until lentils are tender.
- While simmering, slice potatoes thinly.
- Transfer the lentil mixture into a baking dish or keep in the skillet, then layer sliced potatoes on top.
- Drizzle with olive oil and season before covering with foil.
- Bake covered for 30 minutes, then remove foil and bake for an additional 20 minutes until golden brown.
