  • 1 (15-oz) can pumpkin puree
  • 6 cups chopped, peeled sweet potato
  • 1 quart vegetable broth
  • 2 tbsp fresh lemon juice
  • 1 tbsp maple syrup
  • ⅓ cup canned, unsweetened coconut milk (or heavy cream)
  • 1 tsp salt (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté chopped onion until translucent.
  2. Stir in chipotle pepper, garlic powder, pumpkin pie spice, and salt; cook until fragrant.
  3. Add pumpkin puree and chopped sweet potatoes; stir to combine.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 25 minutes until sweet potatoes are tender.
  6. Blend the soup until smooth using an immersion blender or regular blender.
  7. Stir in lemon juice, maple syrup, and coconut milk; adjust seasoning if needed.
