  • 1/4 cup panko breadcrumbs
  • 1 large egg (beaten)
  • 2 teaspoons ketchup
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano

  • 1 tablespoon extra-virgin olive oil (for the skillet)
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 1 1/2 cups beef stock
  • 1 tablespoon ketchup
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon onion powder
  • 6 ounces sliced cremini mushrooms
  • Salt and pepper (to taste)

Instructions

  1. In a mixing bowl, combine the ground beef, panko breadcrumbs, egg, ketchup, oregano, and salt until well mixed.
  2. Shape into four equal oval patties, about 3/4-inch thick.
  3. Heat olive oil in a nonstick skillet over medium-high heat; cook patties for about 3 minutes on each side until golden brown. Transfer to a plate.
  4. Reduce heat and add butter to the skillet; whisk in flour until smooth.
  5. Gradually pour in beef stock while whisking; add ketchup, Worcestershire sauce, onion powder, and mushrooms.
  6. Simmer for about 5 minutes to thicken; season with salt and pepper.
  7. Return patties to the skillet and cook covered for another 10 minutes or until cooked through (internal temperature should reach 160°F).
  8. Serve over mashed potatoes with gravy drizzled on top.
