Ingredients

  • 4 cups cooked rice (long or short grain)
  • 2 tablespoons butter
  • 2 large eggs (whisked)
  • 1/2 cup chopped onion
  • 1/2 cup chopped carrots
  • 1/2 cup frozen peas
  • 1 to 2 teaspoons minced garlic
  • 3 tablespoons lite soy sauce
  • 1/2 teaspoon sesame oil (or oyster sauce)
  • Salt and pepper to taste

Instructions

  1. Chill the cooked rice in the refrigerator until ready to use.
  2. In a large skillet or wok, melt butter over medium heat. Add onion and carrots; cook for about 2 minutes.
  3. Stir in garlic and peas; cook for another minute.
  4. Push the vegetable mixture to one side and add whisked eggs to the other side; scramble until fully cooked.
  5. Stir in chilled rice, adding soy sauce and sesame oil. Mix everything well and season with salt and pepper.
  6. Serve warm as a side dish or main course.
