- 2 tablespoons butter
- 2 large eggs (whisked)
- 1/2 cup chopped onion
- 1/2 cup chopped carrots
- 1/2 cup frozen peas
- 1 to 2 teaspoons minced garlic
- 3 tablespoons lite soy sauce
- 1/2 teaspoon sesame oil (or oyster sauce)
- Salt and pepper to taste
Instructions
- Chill the cooked rice in the refrigerator until ready to use.
- In a large skillet or wok, melt butter over medium heat. Add onion and carrots; cook for about 2 minutes.
- Stir in garlic and peas; cook for another minute.
- Push the vegetable mixture to one side and add whisked eggs to the other side; scramble until fully cooked.
- Stir in chilled rice, adding soy sauce and sesame oil. Mix everything well and season with salt and pepper.
