  • 4 oz beef bacon, diced
  • 2 large eggs
  • 3/4 cup grated Pecorino Romano cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Instructions

  1. Boil a large pot of salted water and cook spaghetti according to package directions until al dente.
  2. In a medium bowl, whisk together eggs, Pecorino Romano, and Parmesan until smooth.
  3. In a large skillet over medium-low heat, cook diced beef bacon until crispy; remove with a slotted spoon.
  4. Sauté minced garlic in the bacon fat for about 30-60 seconds.
  5. Drain the spaghetti and reserve 1/2 cup of pasta water. Add hot pasta to the skillet with garlic and toss well.
  6. Quickly mix in the egg and cheese mixture while tossing continuously to create a creamy sauce; add reserved pasta water as needed.
  7. Stir in crispy bacon along with black pepper and salt; adjust seasonings if necessary.
