- 3–4 cups cooked shredded chicken
- 1 cup sour cream
- 1 medium onion, chopped
- 1 large can enchilada sauce
- 3 cups shredded cheese (Mexican blend)
- 10–16 flour tortillas (9-inch)
- Fresh parsley, chopped
- 1 Tablespoon olive oil
Instructions
- Preheat oven to 350°F.
