  • 4 cups cooked rice (preferably day-old)
  • ½ cup diced white onion
  • 1 cup frozen mixed vegetables (peas and carrots)
  • 2 large eggs
  • 5 tablespoons low-sodium soy sauce
  • 1 ½ teaspoons sesame oil
  • 4 tablespoons butter
  • Fresh lemon juice, salt, and pepper

Instructions

  1. Prepare all ingredients by chopping the chicken and vegetables.
  2. Heat sesame oil and neutral oil in a wok over medium-high heat until shimmering.
  3. Add chicken, season with salt and pepper, and cook until browned (about 5–7 minutes).
  4. Stir in onions and mixed vegetables; sauté until onions are translucent (3–4 minutes).
  5. Push chicken mixture to one side; scramble eggs in the empty space until fully cooked.
  6. Add cooled rice, half the soy sauce, and half the butter; mix thoroughly.
  7. Drizzle lemon juice over the mixture; add remaining soy sauce and butter. Stir well.
  8. Serve hot, garnished with sesame seeds if desired.
