  • 5 pieces of bacon
  • 1 lb ground beef
  • 1/4 cup butter
  • 1/4 cup diced onion
  • 2 sticks diced celery
  • 1/2 teaspoon minced garlic
  • 6 tablespoons flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 lb Yukon potatoes (peeled & diced)
  • 2 cups shredded sharp cheddar cheese
  • Salt & pepper to taste

Instructions

  1. In a large soup pot over medium-high heat, cook the bacon until crispy. Remove and set aside, leaving the fat in the pot.
  2. Brown the ground beef in the same pot until fully cooked. Drain excess fat and set aside.
  3. Melt butter in the pot; sauté onions and celery for about 4-5 minutes. Add garlic and flour, cooking for an additional 2 minutes.
  4. Gradually whisk in chicken broth, then stir in heavy cream, potatoes, Worcestershire sauce, and return the beef to the pot. Bring to a boil then reduce to simmer.
  5. Simmer for about 15 minutes or until potatoes are tender. Stir in cheddar cheese until melted and season with salt and pepper.
