Instructions

  1. Peel and chop the butternut squash and sweet potatoes into equal-sized pieces.
  2. In a large pot over medium heat, add olive oil. Sauté sliced onion until translucent (about 5 minutes), then add garlic and cook for another minute.
  3. Stir in chopped squash and sweet potatoes; cook for about 5 minutes.
  4. Add spices and stock; bring to a boil. Reduce heat and simmer until vegetables are tender (about 20 minutes).
  5. Blend until smooth using a blender, then stir in coconut milk. Season with salt and pepper.
