- 1 cup slivered almonds
- 12 ounces mixed spring greens
- 16 ounces strawberries (washed, hulled & sliced)
- 4 ounces crumbled goat cheese
- 1/2 cup neutral-flavored oil (sunflower/safflower/extra-virgin olive oil)
- 5 tablespoons freshly-squeezed lemon juice
- 2 tablespoons honey
- Sea salt & black pepper to taste
Instructions
- Preheat oven to 350°F (175°C) and spread slivered almonds on a sheet pan.
- Toast almonds for 5 to 7 minutes until fragrant and lightly brown. Set aside to cool.
- In a Mason jar, combine oil, lemon juice, honey, sea salt, and pepper; shake well.
- In a large bowl, layer mixed greens, strawberries, toasted almonds, and goat cheese.
- Dress with Lemon Honey Vinaigrette just before serving and toss gently.
