Description

Easter Salad is a vibrant and refreshing dish that embodies the spirit of springtime. Ingredients

  • 1 cup slivered almonds
  • 12 ounces mixed spring greens
  • 16 ounces strawberries (washed, hulled & sliced)
  • 4 ounces crumbled goat cheese
  • 1/2 cup neutral-flavored oil (sunflower/safflower/extra-virgin olive oil)
  • 5 tablespoons freshly-squeezed lemon juice
  • 2 tablespoons honey
  • Sea salt & black pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and spread slivered almonds on a sheet pan.
  2. Toast almonds for 5 to 7 minutes until fragrant and lightly brown. Set aside to cool.
  3. In a Mason jar, combine oil, lemon juice, honey, sea salt, and pepper; shake well.
  4. In a large bowl, layer mixed greens, strawberries, toasted almonds, and goat cheese.
  5. Dress with Lemon Honey Vinaigrette just before serving and toss gently.
