  • 8 small vine cocktail tomatoes
  • 1 English cucumber
  • 1/4 red onion (thinly sliced)
  • Fresh parsley
  • Fresh cilantro
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 squeeze lemon juice
  • 3 cloves garlic (minced)
  • 1 teaspoon brown sugar
  • 1 teaspoon dried basil (or 2 teaspoons fresh, chopped)
  • 1 pinch pepper
  • 1 teaspoon kosher salt
  • 1 pinch brown sugar
  • 2 pinches salt
  • 2 pinches pepper

Instructions

  1. Cut the tomatoes into wedges and place them in a mixing bowl.
  2. Slice the cucumber in half lengthwise and then into 1/4" thick slices; add to the bowl.
  3. Toss in the red onion, herbs, brown sugar, salt, and pepper.
  4. Whisk together olive oil, vinegar, lemon juice, garlic, brown sugar, basil, salt, and pepper in a glass measuring cup.
  5. Pour the dressing over the salad mixture; toss gently to combine.
  6. Chill for at least 1 hour before serving.
