Ingredients
- 8 small vine cocktail tomatoes
- 1 English cucumber
- 1/4 red onion (thinly sliced)
- Fresh parsley
- Fresh cilantro
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 squeeze lemon juice
- 3 cloves garlic (minced)
- 1 teaspoon brown sugar
- 1 teaspoon dried basil (or 2 teaspoons fresh, chopped)
- 1 pinch pepper
- 1 teaspoon kosher salt
- 1 pinch brown sugar
- 2 pinches salt
- 2 pinches pepper
Instructions
- Cut the tomatoes into wedges and place them in a mixing bowl.
- Slice the cucumber in half lengthwise and then into 1/4" thick slices; add to the bowl.
- Toss in the red onion, herbs, brown sugar, salt, and pepper.
- Whisk together olive oil, vinegar, lemon juice, garlic, brown sugar, basil, salt, and pepper in a glass measuring cup.
- Pour the dressing over the salad mixture; toss gently to combine.
- Chill for at least 1 hour before serving.
