- 5 tablespoons low-sodium soy sauce
- 2 tablespoons hoisin sauce
- 1 head butter lettuce (for wrapping)
- 8 ounces water chestnuts (diced)
- 2 large garlic cloves (minced)
- 1 tablespoon vegetable oil
- 1 tablespoon sesame oil (toasted)
- 2 tablespoons rice wine vinegar
- 1 teaspoon fresh ginger (grated)
- 8–10 mushrooms (cremini or similar, diced)
- 1 pinch crushed red chili pepper flakes
- 1 ½ teaspoons lime juice
- Salt and pepper (to taste)
- Green onions
- Sesame seeds
- Peanuts
Instructions
- In a small bowl, mix sesame oil, hoisin sauce, rice wine vinegar, soy sauce, lime juice, salt, and pepper for the sauce. Set aside.
- Heat oil in a non-stick skillet over medium heat. Sauté mushrooms until softened; set aside.
- In the same skillet, cook ground chicken until browned. Add onions, garlic, ginger, and chili flakes halfway through cooking.
- Stir in sautéed mushrooms and diced water chestnuts with the prepared sauce mixture. Simmer for 1-2 minutes.
- Rinse lettuce leaves gently under cold water. Fill each leaf with the chicken mixture and drizzle with lime juice.
- Garnish with sesame seeds and green onions before serving.
