  • 1 pound ground chicken (or turkey)
  • ½ cup yellow onion (minced)
  • 5 tablespoons low-sodium soy sauce
  • 2 tablespoons hoisin sauce
  • 1 head butter lettuce (for wrapping)
  • 8 ounces water chestnuts (diced)
  • 2 large garlic cloves (minced)
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil (toasted)
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon fresh ginger (grated)
  • 810 mushrooms (cremini or similar, diced)
  • 1 pinch crushed red chili pepper flakes
  • 1 ½ teaspoons lime juice
  • Salt and pepper (to taste)
  • Green onions
  • Sesame seeds
  • Peanuts

Instructions

  1. In a small bowl, mix sesame oil, hoisin sauce, rice wine vinegar, soy sauce, lime juice, salt, and pepper for the sauce. Set aside.
  2. Heat oil in a non-stick skillet over medium heat. Sauté mushrooms until softened; set aside.
  3. In the same skillet, cook ground chicken until browned. Add onions, garlic, ginger, and chili flakes halfway through cooking.
  4. Stir in sautéed mushrooms and diced water chestnuts with the prepared sauce mixture. Simmer for 1-2 minutes.
  5. Rinse lettuce leaves gently under cold water. Fill each leaf with the chicken mixture and drizzle with lime juice.
  6. Garnish with sesame seeds and green onions before serving.
