Ingredients

  • 2 cans (15.25 oz each) whole kernel corn
  • 2 jalapenos, seeded and diced
  • 1 cup shredded Colby Jack cheese (or pepper jack)
  • ⅔ cup sour cream
  • 1 (8 oz) block cream cheese, cubed
  • 6 slices bacon, cooked and chopped
  • ¼ cup chopped cilantro
  • ¼ cup queso fresco
  • Juice of ½ lime

Instructions

  1. Combine corn, jalapenos, Colby Jack cheese, sour cream, and cream cheese in the slow cooker. Add Tajin seasoning if desired.
  2. Cook on low for 2 hours, stirring occasionally until cheeses are melted.
  3. After 2 hours, stir in bacon pieces while saving some for garnish.
  4. Remove from the slow cooker and top with cilantro, queso fresco, and lime juice before serving.
  5. Serve warm with tortilla chips or Fritos.
