  • 1 lb dry navy beans (soaked overnight)
  • 12 oz applewood smoked bacon (chopped)
  • 1 sweet onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups chicken stock
  • 1 cup bourbon
  • 3/4 cup BBQ sauce
  • 1/4 cup ketchup
  • 2 tbsp molasses
  • 3 tbsp pure maple syrup
  • 1/2 cup brown sugar

Instructions

  1. Soak navy beans overnight in water. Drain and rinse.
  2. In a skillet, brown the chopped bacon until crisp; drain excess fat.
  3. Sauté onions in bacon grease until caramelized, then add minced garlic.
  4. In a large pot, combine soaked beans, chicken stock, bourbon, BBQ sauce, ketchup, molasses, maple syrup, and brown sugar; bring to a boil.
  5. Transfer mixture to the crockpot along with bacon and sautéed onions/garlic.
  6. Cook on high for 5-6 hours or low for 10-12 hours until beans are tender.
  7. Let sit on warm for an additional 30 minutes to thicken before serving.
