  • 3 pounds beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 1 can diced tomatoes (14.5 ounces)
  • 2 cups beef broth
  • Corn tortillas
  • Cilantro and diced onion for garnish

Instructions

  1. Soak the dried chilies in hot water for 15 minutes to soften and then blend with onion, garlic, and tomatoes until smooth.
  2. In the crock pot, add the beef chunks and pour the blended chili mixture over them. Add beef broth and seasonings; stir gently.
  3. Cook on low for 8 to 10 hours until the beef is fork-tender.
  4. Shred the beef and mix it back into the sauce.
